Shun
by KAI-Kershaw Knives

Laurent Gras Chef's Knife Set-Kitchen Cutlery and Sushi Knives

Shun Pro is kitchen cutlery for the ultimate knife connoisseur. With a Rockwell Hardness rating of 61, these knives are incredibly sharp instruments.  Kershaw's top knife line features the design preferred by professional Japanese chef's:  a one-sided, beveled edge with a hollow-ground back.

The single bevel design means and incredibly sharp edge that's easy to maintain.  The hollow ground back creates an air pocket between the blade and the food being cut, resulting in less friction damage to the food, and ultimately, a cleaner cut. The beveled edge is one of the secrets behind the sushi chef's incredibly smooth-looking pieces of fish.

Japanese knife shapes are traditional. The Santoku knife shape has always been a Japanese favorite and is used as a Chef's knife.  The santoku is useful for straight chopping, mincing, and slicing of larger quantities of vegetables and meat. Cooks with smaller hands may also prefer this 6 1/2" blade as the shorter length offers better control while cutting. The width also provides a great platform for transporting chopped vegetables from cutting board to sauté pan.

The Cleaver shape is the traditional Chinese Chef's knife and is especially useful to cleave bones, open lobsters and do high volume chopping of meats and vegetables.  Add the classic Chef's knife and the versatile Bread knife and this 4 Pc Shun Classic Set supplies all the basic needs for any chef.

The Deba knife shape has always been a Japanese favorite and is used as a traditional Chef's knife.  The rectangular Nakiri knife is used by Japanese chefs to cut vegetables with a forward thrusting motion.  The straight bottom line of the blade hitting the cutting board evenly fromfront to back is a big plus in cutting julienne strips.

"The beauty of these knives is only surpassed by their performance."
Alton Brown, Celebrity Chef and Author

Kershaw's' parent company, KAI has been Japan's premier blade producers for more than 90 years, yet their tradition of fine blade manufacturing goes back even further.  KAI factories are located in Seki City, Japan's famous samurai sword-making center.  The blade smiths of Seki City have been making some of the world's finest cutlery for more than 700 years.  Working with today's technology, many of the descendants of those blade smiths continure the tradition of excellence for KAI.

"Using a Shun knife makes you feel as if the knife itself is practically doing the slicing, with an uncommonly small amount of energy expended by the chef.  It does exactly what you want it to do, it is unbelievably sharp (you are cutting with a veritable heavy duty razor!) AND it remains rust and stain-free.  They have design elements that push them past the other leading knives:  heavy, serious, beautifully made, expensive... top-of-the-line pro knives all the way."

Rosengarten Report, "The Kershaw-KAI Knife:  The Real Cutting Edge," 9-29-03

"D" Shape PakkaWood Handle
Provides both beauty and function.  Taken from the classic Japanese design for sushi knives, the "D" shape offers maximum comfort and control.  Ebony black PakkaWood provides strength, stability and moisture resistance.  It is manufactured by impregnating hardwood veneers with phenolic, thermosetting resins and fusing them into a soid wood-grained structure for premium applications.

Stainless Steel Bolster
Unique offset design enhances ergonomic qualities for the highest level of safety and control.
The pivot point is just ahead of where the handle sweeps out into the blade.

Stainless Steel End Cap

Adds beauty and durability

Ultimate Edge
KAI scientists developed the ultimate blend of steel :
VG-10 "super steel" is the perfect balance of Carbon, Chromium, Cobalt, Manganese, Molybdenum, Silicon and Vanadium.  VG-10 "super steel" holds an incredibly sharp edge longer for easier edge maintenance.  Rockwell Hardness rating of 61.

NSF Approved.
