Japanese Cutlery-Kitchen and Sushi Knife

Shun Pro is kitchen cutlery for the ultimate knife connoisseur. With a Rockwell Hardness rating of 61, these knives are incredibly sharp instruments.  Kershaw's top knife line features the design preferred by professional Japanese chef's:  a one-sided, beveled edge with a hollow-ground back.

The single bevel design means and incredibly sharp edge that's easy to maintain.  The hollow ground back creates an air pocket between the blade and the food being cut, resulting in less friction damage to the food, and ultimately, a cleaner cut. Shun Classic is not only beautiful but practical.This  absolutely stunning line of cutlery features the look and benefits of Damascus steel, yet without its rusting problems.  Its forged VG-10 "super steel" blade  is clad with 16 layers of SUS410 high-carbon stainless steel on each side to produce a rust-free Damascus-look blade. This exquisite wavy design profile also reduces food's ability to stick to the blade and results in less damage.

Japanese knife shapes are traditional. The Santoku knife shape has always been a Japanese favorite and is used as a Chef's knife.  The santoku is useful for straight chopping, mincing, and slicing of larger quantities of vegetables and meat. Cooks with smaller hands may also prefer this 6 1/2" blade as the shorter length offers better control while cutting. The width also provides a great platform for transporting chopped vegetables from cutting board to sauté pan.
